
The Best homemade sweet pickles

1 Pickle Potion
32oz (or 1L) glass jar with cap
Fresh cucumbers
Sweetener (sugar, honey, or alternative)*
Water (hot)

Pack your jar: Fill a clean 32oz jar with freshly sliced cucumbers.
Add Pickle Potion: Empty an entire Pickle Potion into the jar.
Make Sweet: Add sugar, honey, or your preferred sweetener to taste.*
Fill with water then cap: Pour boiling hot water into the jar until it reaches just below the top, cap it, and give it a shake.
Age it: Let the jar sit at room temperature for 12-24 hours, then mature in the fridge for at least 4 days!

Use a Wide-Mouth 32oz or 1 Liter Jar: A wide-mouth jar allows for easy layering of cucumber slices. If you don’t have one, consider Ball or Kerr wide-mouth jars (amazon link: tinyurl.com/picklepotion).
Choose Fresh, Small Cucumbers: Opt for firm, small cucumbers with no blemishes or wrinkling. Small cucumbers pickle more evenly and provide a satisfying crunch.
Trim and Slice Uniformly: Trim both ends of each cucumber and slice them to your desired thickness. For even pickling, aim for slices about 1/4 inch thick.
Pack Slices Vertically or Horizontally: To fit more slices and create a visually appealing jar, arrange cucumber slices vertically along the sides or stack them horizontally.
*Add Sweetener of Choice: On a sugar free diet? Feel free to substitute with honey, agave syrup, or any sweetener of preference! If it’s not sweet enough after aging, you can add more sweetener to taste.
Leave Space at the Top: Leave 3/8 inch (1cm) at the top of a 32oz jar or 3/4 inch (2cm) for a 1L jar to ensure cucumbers remain submerged in brine.
Cap & Shake: After adding hot water and capping, shake the jar gently to mix the Pickle Potion and sweetener evenly.
Aging more = deeper flavor. If you want your pickled tomatoes to be more fermented/ complex in flavor, wait closer to 24 hours before putting them in a fridge. —> If you want a fresher taste with less depth, wait only 12 hours before putting them in the fridge. —> If you leave them out of the fridge past 24 hours, your pickled tomatoes may over-ferment, making them soggy and too sour.
The wait is worth it. A pickle is just a vegetable with experience. Your jar needs to mature at least 5 days (total) in order for the tomatoes to absorb all the salt and spices from the brine to become incredibly delicious.
Storage Note: Store sweet pickles in the refrigerator. Properly sealed jars can last up to 5 months while maintaining quality.
